A nice idea for Easter to be exposed in your shop-windows, made with silicone mould which allows the obtaining of high-reliefs and low-reliefs, that with other moulds, made with different materials, can't realize.
The Master Gabriele Bozio proposes this elaborated item, made with ice cream, thanks to one of decosil® moulds.
Insert the silicone mould in the thermoformed one by matching the side edges.
From the inside, push delicately the silicone locks into the holes provided on the hard support. Repeat the process to obtain the two halves.
Using the brush, paint the dark chocolate layer...
…to create the two halves of the egg...
…in both the moulds…
Lay in the middle some the egg custard ice cream…
…and fill with sponge cake, moisten with the choosen syrup…
… and finish to fill the mould with ice cream…
…repeat the processes with the second half.
Join the two halves of mould.
Cover with plastic wrap and place into the blast chiller...
Pour into the mould some tempered white chocolate…
…cool down in a blast chiller and unmould…
... complete with food color the chick paws...
… gently unmould the chick…
…from the silicone mould…
… then with the tempered chocolate…
… prepare the support base…
… moisten the egg bottom…
… insert in the lower part of the shell the previously colored paws…
…fixing them with the usage of tempered white chocolate…
…spray the ice cream chick with food color…
… and finish the details with a pastry bag…
